Our favorite way to cook the Whole Chicken is to roast it in the oven. Preheat the oven to 400°F, remove the Chicken from packaging and pat dry. The dryer the skin, the crispier it will become. You can even let it dry for about an hour, if you have time. Rub the chicken with avocado oil and then season it, inside and out, with salt, pepper, and garlic. Rosemary also makes a great addition to this herb blend. Place in a roasting pan on a rack. Cook for 45 minutes or until the internal temp is 165°F. Allow it to rest uncovered for 20 minutes in a warm spot. Carve and enjoy. Make sure to save the leftover bones to make stock. Place the leftover carcass in a pot and cover with cold water. Add vegetables and herbs, and simmer for up to 24 hours. Strain, and you have delicious homemade broth.
